Abstract

Rasau Jaya I Village, Kubu Raya Regency, has high pineapple production, yet pineapple peel waste has not been optimally utilized by the community. Pineapple peel contains carbohydrates and sugars that can serve as a fermentation medium for producing Nata De’Pina. This community service activity aimed to improve the knowledge of the Women Farmer Group about processing pineapple peel waste into nata as a value-added product and as a local implementation of green economy principles. The activity used several stages, including an initial survey, preparation of facilities, Focus Group Discussion, socialization, education, product-making demonstration, discussion, and evaluation through pre-test and post-test. The program was conducted on February 21, 2025, in Rasau Jaya I Village and involved 40 members of the Women Farmer Group. The demonstration included preparing pineapple peel extract, adding sucrose, vinegar, urea, and Acetobacter xylinum starter, followed by fermentation until a nata layer was formed. The evaluation showed a clear increase in participants’ knowledge. Before the education session, only 12.5% of respondents were categorized as having good knowledge, while after the activity the proportion increased to 90%. These findings indicate that education and demonstration were effective in improving community understanding of pineapple peel waste utilization and product development.
